To think that Parsi & Goan cuisine would blend so well was an unusual thought born out of the common interests shared between Prochi & Nixon. At the same time, to act upon this simple yet experimental idea was tough. As they started gathering details and carrying out their research, the idea took the shape of something definite. It soon turned into a goal in its purest form. The one that compels you to ponder over and leaves you with consecutive sleepless nights.
As the famous saying goes- Experiment, experiment, experiment – until it finally flows from within you. It is a hard road. But the result is also a deep inner satisfaction.
With that said, let’s see how the founders' hard work resulted in a strong desire to give the best to their customers. From March to September 2020, the focus was on planning that led to a perfectly tailored, well-thought menu. The founders simply didn’t want to take a dish from both cuisines and put it together. The pairing of every dish on the menu is done strategically and involves a considerable amount of research so as to uplift and retain the flavors of both cultures.
In a nascent stage, our founders thought of connecting with people and keeping the memories of their close and dear ones alive through food. With great determination they started something of their own, creating job opportunities for the underprivileged and getting out from a rut of their monotonous jobs by simply doing what they love. Over the years, this determination has shaped a much more robust and bigger desire to achieve something bigger and better.
For Prochi, food holds a special place in her heart. It takes the place right next to her granny. The love roots in her efforts of keeping the memories and teachings passed down from her grandmother alive. Whereas, Nixon finds a way to connect with her mother through food. He finds joy in cooking for his friends and family just like his mother used to. The emotional connection that both the founders have with food inculcated the idea and passion in them to bring out uniqueness into the world.
If you think about it, Parsi & Goan cuisine share a lot of similarities. For one, both cuisines love to use coconut in their dishes. The spiciness of Parsi dishes compliments the tanginess of Goan cuisine. The ancestral history has a strong influence on both cultures. This influence is very evident in their style of cooking.
Coming from a middle-class family, it required a lot of courage for our founders to get on the path of making their dreams come true. They have had their fair share of ups and downs. It is still a process and a journey filled with lots of learning, hardships, and happiness. At the end of the day, the feeling of serving their customers homey, hearty meals that brings a smile to their face is what motivates our founders to keep creating, experimenting, and exploring. On days when things seemed impossible, Prochi & Nixon had a wholesome plate of dhansak & dreamy bread pudding to fall back on. Because when all else fails, there is food to keep you afloat and intact.
